I love to know what some of you like to do cook most or bake.? I hate cooking been there done that for so many years, raised 3 children and then some.
But, I love to bake. I have a super Banana Nut Bread or do without nuts. You will not waste another banana for the riper the better.
I will post my receipe and why not post the one you like to cook or bake most, we can all have wonderful prepared meals and desserts this way, share and collect. How about it? Now come on members, do not be lazy or disinterested as collecting good receipes tried I love to do and most of you should also. I know alot of youngins are here so most likely I will not get many but want yours older ones.....PLEASE!! Even good drinks made to serve, punches, anything. I love to read and type, it gets slow so when so come here and answer me with some GOODIES...
BANANA BREAD MAKES TWO LOAVES SO HALF FOR ONE!!
6 large ripe bananas or more if small ones.
2 cups white sugar granulated type
4 cup sifted flour, I do not sift n see no difference
2 tsp. baking powder
2 tsp soda in 2 tbsp of water, mix set aside
1 tsp vanilla
4 eggs
1 cup veg. oil
Mash bananas, add sugar, mix and let stand aside 15 minutes
Add soda in water, vanilla, oil n eggs, mix with dry ingredients.
Mix in banana mix with sugar and stir or beat lightly and can add 1 cup chopped nuts. Optional.
Bake 350 for 60 minutes, keep testing with toothpick in middle.
I eat with butter on right out of oven, love it love it. I also chop my nuts in food processor good to digest as I add more than should. Pour into loaf pan, I lightly grease bottom and sides as mine sticks sometimes. Do not know why, but only takes ten minutes to make this.

Heres a recipe I do at any occasion :) :
Crostini with Ricotta and Goat Cheese
24 (1/2-inch-thick) slices baguette bread
3 tablespoons olive oil
4 ounces soft fresh goat cheese
1/4 cup whole milk ricotta cheese
1 tablespoon finely chopped fresh basil leaves
2 teaspoons finely grated lemon peel
Salt and pepper
Heat a grill pan over medium-high heat. Brush 2 tablespoons of olive oil over the bread slices. Grill the bread until golden brown, about 2 minutes per side.
Stir the goat cheese, ricotta cheese, basil, lemon peel, and remaining 1 tablespoon of oil in a small bowl until smooth and creamy. Season, to taste, with salt and pepper. Spread the cheese mixture over the crostini. Arrange the toasts on a platter and serve.
Mmmmm it's soooo good!:D

:) Its just like a loaf of bread.. but its long..and harder.. not too hard..crispy:), you can probably get it at any supermarket..:)

My favourite dessert is Strawberry Squares! :) (Taken from my mother's cookbook...I don't know what the name of it is since the cover is ripped off.)
Ingredients:
1/2 cup butter or margarine
3 tbsp. icing sugar
1 cup all-purpose flour
Mix above ingredients and pat into a 9X12" pan. Cook 10 minutes at 350ºF until light brown. Cool.
Filling:
1 tub frozen strawberries
1/2 cup sugar
1 pkg. strawberry Jell-O
1 envelope Dream WhipBoil strawberries and sugar. When hot, add Jell-O. Boil 3 minutes. Cool.
Prepare Dream Whip. Add one-third of mixture to strawberry mixture. Reserve rest of cream for topping. (If you wish to have thicker topping, use 2 envelopes of Dream Whip.) Refridgerate.
This recipe can be cut into small squares or cut into larger ones and served as a dessert.

Spinach & Cheese stuffed Puff Pastry
12 frozen puff pastry shells, unthawed
1 cup heavy cream
1/4 cup whole milk
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 (16-oz) package frozen chopped spinach, thawed and squeezed dry
1 1/4 cups grated Fontina cheese
1/4 cup freshly grated Parmesan
3 to 5 green onions, finely chopped
Preheat the oven to 400 degrees F.
Line a heavy large baking sheet with parchment paper. Arrange the frozen pastry shells on the baking sheet and bake until they puff and become golden brown, about 20 minutes. Using a small knife, cut out the center of the pastry shells.
Meanwhile, stir the cream, milk, salt, and pepper in a medium bowl. Stir in the spinach, Fontina cheese, Parmesan, and green onions. Spoon the spinach mixture into the baked pastry shells. Bake until the pastries are golden brown and the filling is hot, about 25 to 30 minutes. Transfer the pastries to a platter and serve.

ohhh i have a ton of good holiday recipies, i love to make sweets, lots of them, will post some here in just a bit when i can find my recipies lol they are burried in one of my cabinets, but not sure what one...
i will post my pumpkin chocolate chip cookies, and cathedral cookies, and spinach dip.

A typical recipe and a MUST have on Thanksgiving.
Green Bean Casserole
INGREDIENTS:
1 can (10 3/4 ounces) condensed cream of mushroom soup
4 cups cooked green beans
1/8 teaspoon pepper
1/2 cup milk
1 1/3 cups French fried onionsPREPARATION:
Mix soup, milk and pepper in a 1 1/2-quart casserole dish. Stir in beans and 2/3 cup of the fried onions. Bake for about 25 minutes at 350 degrees F. Top with the remaining 2/3 cup fried onions and bake about 5 more minutes, until onions are lightly browned.
Serves 6.

I tell you what. I used to use the canned cranberry sauce until one of my stepdaughters insisted that we make it fresh. What have I been missing all these years! It's not even that hard!
Get 1 bag cranberries, 1 cup water, 1 cup sugar. Bring to the boil and stir the whole time. Let cool. You'll never eat the canned stuff again!

How do you all cook your turkeys?
We have one of those deep fryers. We inject it with italian dressing, rub it with some spices, and then plunk er into one of those big deep fryers. I swear, I'll never cook it any differently. Soooo good.

I put mine in my new oven, used the injector and use can of beer. Hmmmm good. I keep basting it also. That is what keeps the flavor. We have one of those deep fryers, it made it too brown, do not think hubby read directions, it stunk cooking and I love to smell it. He hurries things, I like to do my own way slowly. lol.

I use the frozen packages. They're great & totally easy.

Get 1 bag cranberries, 1 cup water, 1 cup sugar. Bring to the boil and stir the whole time. Let cool. You'll never eat the canned stuff again!
We used to be the same.
I get 2 bags, boil one down, chop up the others. It more of a cranberry relish. 2 cups of suger and 3/4 chopped walnuts. And after the cooked portion is just about done, add 4oz grand marnier for 1 more minute simmering. Sit overnight. mmmmm that little bit of orange tang, crunchy berries & nuts. We even spread leftovers on toast.
But if your really in a pinch - last minute - you can get the tubs of oceanspray cranfruit. Just add 1 oz gran marnier to small tub and little it infuse overnight.
