Ok.. so we have a veggie here...

I want a few veggie recipies to try and they better be good ;)

I wanna test it for a week and see how long I can hold out before I go lazy and buy a burger.. *LOL*

I doubt I can make it for a long time too.. but Im gonna try.. ;)

but don't you need a lot of food cause of your desease?? you might need to be carefull with changing diet without asking the Dr... don't want you to worse sweetie..

Yeah totally! I think if I don't eat meat I would be loosing a lot of calories and fat..and I need a lot of fat so that wouldn't be good:(
I wanna not eat it because of..the way they treat it..but it's healthy for me.

sweetie, you have a desease that makes you not being able to eat all sorts of food. That is WAY different. I could prolly do good without some of all the meat I eat.. after all Im 200 pounds ;) hey You can get my excess fat *lol*

I like veggie food though, but meat still has it beat but it's always good to change up and if we have a veggie here I might as well steal some recipies ;)

well there's lots you can make... though vegan would be a lot more difficult to cater for than vegetarian. Potato based dishes - rosti, dauphenese (sp?) if they're ok with cream.
Roast dinner, but without the meat is a great vegetarian dish..

also a lot of pasta based dishes can be vegetarian, personally I like making a big rice/paella dish without the seafood but with like, chopped asparagus, peas, sweetcorn, beans, carrots etc.


there are also a lot of bean based dishes you can make, vegetarian burritos!

no probs :D i've never been a fan of meat so i just don't get it... but a lot of it looks well... really nasty to me, at least when its raw in the shop. When its cooked most of it looks fine & dandy though

and its not all fun & games not eating meat, i'm a 200lb man and pretty muscular, i have to drink a lot of protein shakes :(

oh i see!

well rest assured, i'm not somebody who thinks that meat is murder and everything along those lines. I believe it is the natural order... I just have not liked the taste of chicken or any red meat since i was about 5 or 6 years old...


which is pretty ironic because at 6 years old i was guest of honour at the opening of a McDonalds (my sister wrote to Ronald McDonald asking if we could go to the opening and they took us through the drive through in a convertable, haha)

Good for you Monkey! :D I think you'll enjoy how good you feel after a week of no meat rotting in your colon. LOL I have a major headache right now and can' think very well...but I promise to post lots of my fave veggie recipes for you to try! Here's one to start out with...

-ONE POT PENNE PARMESAN-

Here's what you'll need:
1 tablespoon butter or margarine
1 3/4 cup ((or 14 1/2 oz can)) vegetable broth
8 oz Penne Rigate ((That's a type of pasta, if you didn't know. I eat A LOT of pasta!))
16 oz frozen broccoli, carrot, and cauliflower mix.
1/4 teaspoon ground black pepper
10 3/4 oz cream of mushroom soup
3/4 cup milk
3/4 cup grated parmesan cheese
*OPTIONAL* I like to add a package of Morning Star vegetarian "chicken" , cut up into bite size cubes.
*OPTIONAL* Your fave flavor of BBQ sauce

How to do it:
In a 5-quart sauce pan, over medium heat, melt butter. If you decide to use the fake chicken, add it now. Cook the chicken in the butter for 5 minutes. Add vegtable broth and heat to boiling. Add uncooked pasta, veggie mix, and pepper. Stir until pasta is coated. Heat to boiling, and then reduce heat. Cover pot, and simmer for 13 minutes, stirring every two minutes until pasta is tender and most of the liquid has been absorbed. Meanwhile, in a medium sized bowl, mix together the cream of mushroom soup, milk, and 1/2 cup of the parmesan cheese. Stir until smooth, and then stir into the pasta mixture. Heat until mixture comes to a boil, and then add the rest of the cheese. You can also add a bit of BBQ sauce to taste, and it's REALLY good!

I hope you try it! It is delicious! :D And if you're not a big fan of one of the ingredients like broccoli or mushrooms...try it anyway. You'll be surprised how this recipe can help you enjoy veggies you don't usually prefer! ((I really don't like cauliflower but I LOVE this stuff!)) Don't be scared of the veggie chicken either. Chicken is REALLY easy to fake! I wouldn't suggest eating strips of it like you would real chicken, because it does taste a bit different, but as a substitute for the real thing it is great!

EDITED TO ADD: I just remembered...if you like olives or artichoke hearts, they also taste great added in! The key to being veggie is trying new things! :D

Until my about folks came to live with us, we ate veggie meals 3x's/wk Not so much anymore. On of my favorites, 2 cans black beans (or other beans) rinsed and drained, 1 can corn drained ( I like Shoepeg) 2 large chopped tomatoes, 1 chopped avacado, 1 diced red onion, 1/8 to 1/4 c chopped fresh cilantro. Dressing 2 T olive oil, 3 T lime juice, 1 T wine vinegar, salt and pepper to taste. Serve on lettuce with tortilla chips.

This recipe can be varied many ways, by switching the type of dressing, adding cheese, etc. The secret to it is the fresh cilantro.

Alrighty....here's some more!

-VEGETARIAN ENCHILADAS-
((This one doesn't have exact measurements, but it's super easy to make!))

What you need:
Baking pan
Flour tortillas
Refried beans ((Make sure the can says vegetarian, or check the ingredients for lard, or it wont be veg! ;)))
Black beans
Chopped up olives
Diced Tomatoes
Banana Peppers ((Or other types of peppers that you like))
Enchilada Sauce ((My fave is the green kind))
Cheese of your choice
*OPTIONAL* This is another recipe that is DELICIOUS with Morning Star chicken. I prefer to fry the chicken strips first, so they are crispier. Also, if you use taco seasoning while you cook the chicken, it's really good.

How to make it:
Pre-heat oven to 350
Place flour tortilla on a plate. Using a spoon, spread a layer of refried beans onto the tortilla. Add black beans, olives, tomatoes, peppers, cheese, and "chicken" if preferred. ((Don't be afraid to try other ingredients! This is just usually what I use.)) Then, spoon a bit of enchilada sauce on top. Wrap burrito style...Fold left and right sides inward, then roll together starting with the bottom. Place wrapped enchilada on the far side of the baking pan. Lay the enchilada so the last rolled part is on the bottom, so it doesn't come back open. Do this with as many tortillas as you can fit into the pan. When all the enchiladas are in the baking pan, pour remaining enchilada mix on top of them. Then, place in the oven, and bake for ten minutes. Sprinkle some more cheese on top and bake for an additional two minutes. Serve with ketchup, salsa, or sour cream.

This is a fave of my meat eating friends! :D

I thought I would post some ideas for easy and quick things to eat when you don't feel like cooking...

-PB&J Sandwiches
-Cheese only pizza or veggie pizza ((Topping ideas: Olives, peppers, mushrooms, artichoke hearts, tomatoes, spinach, onions))
-Veggie burgers ((Some Burger Kings and Mcdonalds have these))
-French Fries
-Mozzerella Sticks
-Subway sandwiches ((Some Subways have what's called a "veggie patty" that is REALLY good! If not, just pile on the cheese, get veggies and sauce you like, and leave out the meat))
-Pastas ((Spaghetti, mantacotti, alfredo, cheese/mushroom ravioli, zitti, ect))
-Macaroni and Cheese
-Fried Squash/Zucchini/Eggplant/Asparagus ((Put some butter in a frying pan, slice up the veggies, fry them in the butter using whatever seasonings sounds good.))
-Salad
-Oatmeal
-Cereal
-Canned Soup ((Ministrone, vegetarian vegtable [check for beef/chicken stock!!!], broccoli and cheese, potatoe and cheese, lentil soup, ect))

I could go on and on...but those should give you some ideas.

And if you want to go out to eat, there are lots of options. Steak houses usually aren't the best place to go unless you just want a big salad. Buffets are another place that's hard to find a lot of options. Italian restaraunts have LOTS of options, so do Indian and Mexican. Pizza places are also easy. For fast food places, get some fries, tater tots, mozzerella sticks, a salad, or if you can, a veggie burger.

I ended up doing something much simpler.. owner of the house (we are a bunch ofpeople who shares) is vegan and love to cook. I pay my part of the food and he cooks for me. He's a cook and he always make too much, so this benefits all. So from now on 2/3 of my food will be vegan.. *lol*

Ill show him the recpies though he loves new things :)
