View Full Version : Sweet potato pecan pie

No I can't enter the contest :p, but this recipe is for a pie that friends and relatives always ask me to bring for holiday dinners. It's kind of like a Pecan Pie only healthier because it has veggies in it! I hope you like it! :)


1 9-inch prepared pie crust
1 C mashed cooked sweet potatoes
2 eggs
1/4 C brown sugar
1/2 t cinnamon
1/4 t nutmeg
1/2 C light or dark corn syrup
1 T melted butter or margarine
1/2 C white sugar
1/2 t vanilla
1 C pecans


Take 1 egg and mix with sweet potatoes, brown sugar, cinnamon and nutmeg. Spread on bottom of pie crust.
Take second egg and mix well with corn syrup, sugar, butter and vanilla. Stir in pecans.

Bake at 1 hr at 350 F.

Never heard of this...but it does sound good...will have to try it out for sure.

Oh. Wow! That looks delicious! And same with Danny I never heard of that before. Where do you buy pie crust? I'm asking since I really want to cook this and I don't know where you can buy pie crust. Well, thanks for the recipe!

If you're in the US you can buy ready made ones or the kind that you just unroll and put in the pan. If you can't find it ready-made you can always make it yourself.

Oh. Thanks skunkstripe! I'm going to cook the pie crust, but I'm sure it's still going to taste good!
