View Full Version : STUFFED PEPPER CASSEROLE hnnnn GOOD

Stuffed green peppers take on a fresh new personality with seasoned stuffing, ground beef, tomatoes and sweet corn kernels.

Ingredients

2 1/2 C. Herb Seasoned Stuffing
1 Tbs. butter OR margarine, melted
1 lb. ground beef
1 medium onion, chopped
1 can (14 1/2 oz.) whole peeled tomatoes, cut up
1 can (about 8 oz.) whole kernel corn, drained
2 medium green peppers, cut lengthwise into quarters

Directions


Mix 1/4 C. stuffing and butter. Set aside. Cook beef and onion in skillet over medium-high heat until browned. Pour off fat. Add tomatoes and corn. Add remaining stuffing. Mix lightly. Arrange peppers in 2-qt. shallow baking dish. Spoon beef mixture over peppers. Cover. Bake at 400 F for 25 min or until peppers are tender. Sprinkle with reserved stuffing mixture. Bake 5 min. or until golden.

TIP: To melt butter, remove wrapper and place in microwave-safe C. Cover and microwave on HIGH 30 seconds.

Note: I changed from Can of Tomatoes to Tomatoe Purree, I like lots of sauce, this way it makes more using the Purree. Also, I add more meat, I get ground round. And, I do not micro wave, I use my confection Oven I just love and use daily almost..!!

Ooooooooohhhhhhh! That sounds yummy and it looks delicious! I never heard of this food before, but still, I want to try it! Thanks for the recipe!

Oohh that sounds good. I have made stuffed peppers before but nothing like that.

Oh my you have to do stuffed peppers sooooo good it might give a heart attack, ha ha. Kiddn of course. I add extra lean meat and use purree rather than hunks of tomatoe just my personal choice, u can docter any receipe up to fit your taste buds. lol.:)

Good it is easy to make as said I get the better ground meat, etc. Just use my suggestions made and it is delicious, know u will love this and can make enough for next day heat ups. Two days, depends on how many u stuff.:)

I made them for dinner today and I have to agree that these are delicious.
