A healthy, hearty chicken recipe for those chilly nights! Great for potlucks and family gatherings, you'll get lots of compliments on this chili!


Preparation Time: 90 minutes

Cooking Time: 45 minutes

Serves: 6 servings

Ingredients
3 boneless, skinless chicken breasts, baked
1 medium to large diced onion
2 cans Goya small white beans
3-4 cloves minced garlic
1 can chicken broth
1 can diced tomatoes
3 tablespoons cumin
1 tablespoon chili powder
1/2 teaspoon cayenne powder
1 tablespoon oregano
3 tablespoons corn starch mixed into 1/2 cup warm water
Salt & Pepper

Directions
Sautee' the onion and garlic in olive oil until translucent. Add tomatoes and all the spices and simmer for 10 minutes. Add one can of the beans drained and mash the entire mixture. Add 1/2 can of broth and cook for 10 minutes. Add the second can of beans and the remaining chicken broth, and do not mash this time. Cook for another 10 minutes. Add the chicken and cook for 15 minutes. Add the corn starch/water mixture and cook for another 15 minutes. Season to taste with salt & pepper.
I LOVE CHILE WITH CORN BREAD OR MUFFINS. CAN FREEZE WHAT IS LEFT FOR A MEAL ANOTHER DAY.
