View Full Version : Does anyone have a meatless chili recipe?

Dear ones, I was wondering if anyone knows a recipe for chili without meat in it. Mild or spicy is okay. I'm having friends over Friday, planned to make chili in the slow cooker. They're Catholic, so no meat on Friday during Lent. I'm happy to make a non-meat dish, but I need a recipe. My friend specifically asked for chili - I think we both forgot about the meat on Friday issue! But that's okay, because I love chili with or without the meat!

Here is one since I am a good lean beef nut, I looked in my mom in laws box, now passed, bless her and found a couple.

1 package dry onion soup mix
4 cups water
1 (15.5-ounce) can garbanzo beans
1 (15.5-ounce) can kidney beans
1 (14.5-ounce) can whole tomatoes, chopped
1 cup lentils
1 celery rib, chopped
1 tablespoon chili powder
2 teaspoons ground cumin
1 garlic clove, finely chopped
1/4 teaspoon red pepper flakes
In large saucepan combine dry onion soup mix, water, garbanzo beans, kidney beans, chopped whole tomatoes, lentils, chopped celery rib, chili powder, cumin, chopped garlic clove, and red pepper flakes. Bring to a boil, then simmer, covered, stirring occasionally, for 20 minutes.
Remove the cover and simmer, stirring occasionally, an additional 30 minutes or until the liquid is almost absorbed and the lentils are tender.Makes 6 servings.

just replace the meat with the veggie alternative..

QORN!!! it dont taste anything but only take taste fromthe spices you use. It's good and really good for the tummy...

Here is another that sounds good top with cheese or sour cream on top.

It's all in the beans!!!"
Ingredients
2 cans crushed tomatoes (1 in basil garlic flavor if you can find it)
2 tbsp chili powder
1 tsp cumin
1 tsp oregano
Salt and pepper to taste
1/2 tsp creole seasoning
1 can white kidney beans
1 can red kidney beans
1 can black beans
1/2 regular size can vegetable stock
Directions
Rinse beans before adding to pot. Add all ingredients into a large soup pot and let simmer on medium for 30 minutes to let flavors meld.

Also you could always substitute real ground beef with ground boca burger. Most stores carry it and it tastes like the real thing. I have Boca everything in my freezer ;).

Thank you, everyone! I like chili with meat in it, but the "meatless" version turned out all right. I just wanted to make it easier for my friends with it being Lent and all. Just a couple more weeks till Easter and then I won't have to worry about it when they visit again. It's my turn to go there next and we are going to see if we can make our own vegetable or bean soup. Less salty than the canned versions.
