after JGLI and me swapping some recipes she suggested i put this one in the forum.
as i was making this bread today after finally finding some spelt flour online and it arrived today i thought i should share the recipe and two pics of the finished product.


here it goes
Red Pepper Bread with a melted cheese crust


200g red peppers
2 table spoons butter
2 table spoons olive oil
5 teaspoons paprika powder
a dash of chilli powder (if you like it spicey than some more)
a dash black ground pepper
80ml water

15 g yeast (or dried yeast according to amount of flour)
1 teaspoon honey
100ml water

230g white flour (wheat)
150g wholemeal spelt flour
2 teaspoons seasalt

grated cheese of your choice

de seed and chop the red peppers heat the butter and oil in a pan and put in the chopped peppers and herbs/spices from the first colum now add the 80ml water out of the first colum and simmer until the peppers are slightly soft, leave to cool.

if you are using fresh yeast mix it into the 100ml luke warm water from the second colum and mix in the honey.

now mix both flours in a big bowl and add the sea salt if you are using dried yeast add this to the flour now.

with fresh yeast add the water yeast and honey mix to the flour cover with some flour and leave in the bowl covered with a damp tea towel for 15 minutes.

now add the cooled pepper mixture and knead for 5 min. i do this with a hand held mixer as this dough is very sticky.
cover with a damp tea towel and leave to stand till it rose to double the volume.

butter a rectangular baking dish and preheat the oven to 250 degrees celsius.

once the dough has risen to double its volume transfer it to the baking tray and leave it standing covered for a further 5 minutes.
now sprinkle as much grated cheese on as you like and put in the oven for 10 minutes at 250 degrees
and 30 minutes at 180 degrees celsius.

i hope i didn't make it sound too chaotic now as i translated it from my german book.

That bread looks lovely. It has made me hungry.

I've printed it off and will certainly make some soon.

I get my spelt flour from Tesco but I think most of the supermarkets have it - Doves make it! I know you are out of the way though.

I had never heard of it either and I bake a lot.

It sounds like maybe you can use whole wheat flour.

That sounds delicious. I'm not too familiar with spelt flour or yeast, but I'll give it a whirl. Thanks for the recipe.
